Roasted sausage with apples and red onion

Ingredients

  • 6 RSPCA Assured labelled pork sausages
  • 2 red-skinned apples, sliced
  • 1 large red onion
  • 3 large garlic cloves
  • Juniper berries
  • Sprigs of fresh thyme
  • Olive oil
  • Salt and pepper to taste

Roasted sausages with sweet caramelised red onion and apple make for a fantastic autumnal centrepiece. It’s quick and easy and can be scaled up or down, depending on the number of guests. The below quantities would serve three people as a main course.

Method

  • Preheat a large roasting tin in the oven at 220°C, fan oven 200°C/gas 7.
  • With a sharp knife, slice the apples into rounds
  • Peel the red onion and cut off the bulb and root at the bottom, and tunic at the top
  • Rinse the onion in cold water before slicing it into wedges
  • Separate three large cloves from a garlic bulb - do not peel them
  • Add the sausages, apples, onions and whole garlic cloves to the roasting tin and sprinkle with oil, salt, pepper, a pinch of juniper berries and the sprigs of thyme
  • Cook according to the sausage packet instructions, usually for around 30 minutes in the centre of the oven, turning halfway through
